Opticks
This is one of the best open source digital image processing softwares out that is simple to install and fairly easy to use. I have grand plans of doing some additional development on this software to add to their base. As of March 2010, the Opticks team has introduced spectral signatures and Python capability. Image processing, various remote sensor platform support, including hyperspectral.
Leica Geosystems - ERDAS Imagine
My personal preference because I have expertise in it. This is one of the leaders in digital image processing for remotely sensed imagery. Image processing, photogrammetry, radar, hyperspectral.

MicroImages - TNT Mips
The Lite version is fully functional with weekly updates and bi-annual full updates. The free version is limited to 1 Mb file sizes. Users can process sample hyperspectral data. Be sure to download the various modules and data (~700Mb for full install, with weekly updates ~30-50Mb). This sofware runs on all Major OS's, another benefit. Image processing, hyperspectral, radar, DEM creation, photogrammetry.
I use this for my class and it works fine. Students can load this at home and use it as a surrogate for the professional grade software that has to be used on campus.
ERMapper
Another major image processing software used often on college campuses and research facilities. Image processing.
RSI (Research Systems, Inc.) - ITT Industries - ENVI
The company started out of NASA scientists and are also the creators of IDL - the interactive data language for data visualization and analysis and used to process images from space satellites and telescopes. IDL is cross platform and is used to process hyperspectral, radar, lidar, and other common forms of remotely sensed imagery.

PCI Geomatics
A Canadian digital image processing company offers a suite of software like the others. Primarily used in Canada, but there are a number of users throughout the US. Image processing and photogrammetry.
GRASS - (Free, Open Source, Fully Functional)
GRASS is truely Open Source and fully functional and cross platform. Installation of the software and setup require some computer savvy, but still quite useful. GRASS has been around for a long time and was/is used for those with a limited budget. See also QGIS for related GIS components.
